Iván Solís Costa Rica
Iván Solís founded, together with his wife and children, the Solís & Cordero coffee processing micro-mill in Tarrazú, San José, Costa Rica.
Iván started working with coffee at the cooperative CoopeDota when he was very young.
Through his work at this coffee cooperative he gained all the practical experience of growing and processing coffee.
He also got to know all the coffee farmers of the Tarrazú region.
In 2009 Ivan became a certified Q-grader and in 2017 he established his own micro-mill.
Ivan grows and buys coffee from all its neighbouring farms and processes it at his micro mill.
They use the white honey process which means that cherries are sent through a machine that removes 85-90% of the mucilage before being laid on raised beds to dry in the sun for 12-15 days.
