Produced by Vava Angwenyi, founder of the social enterprise Vava Coffee, this coffee comes from the Mukuyuni Farmers Cooperative Society, a cooperative with over 25 years of history that prioritizes organic farming and gender equity in its management.

Processed using the washed method, it is a coffee of the SL28 variety, one of Kenya's most iconic, renowned for its ability to produce exceptional flavor profiles.

This variety was specifically developed to thrive in Kenya's agro-climatic conditions, including nutrient-rich volcanic soils and high altitudes.

Vava aims not only to produce extraordinary coffees but also to create social impact, empowering producer communities and promoting female and youth leadership in the coffee industry.

The Vava Mukuyuni AB coffee originates from the Machakos hills in Kenya, grown at altitudes between 1700 and 2000 metres. This exceptional SL28 variety, washed-processed coffee delivers tasting notes of blackberry, blueberry, and the delightful “summer pudding.” But behind every sip lies an inspiring story, led by Vava Angwenyi and her social enterprise, Vava Coffee.

The Beginning of Change

Vava Coffee was founded in 2009 as a woman-led initiative aiming to redesign the coffee value chain to benefit producers. Founded by Vava Angwenyi, a visionary with a clear mission: to challenge the coffee industry’s status quo and empower communities, especially women and youth. Vava is not only an entrepreneur but also the author of Coffee Milk Blood and a former member of the Specialty Coffee Association (SCA) board from 2019 to 2020.
From the start, Vava and her team worked closely with Kenyan farmers to understand their challenges. Through trust and education, Vava Coffee introduced a model that provides real solutions for producers, breaking gender barriers and promoting sustainability.

Mukuyuni: An Exemplary Cooperative

The Mukuyuni AB coffee is produced by the Mukuyuni Farmers Cooperative Society, which has practiced organic farming for over 25 years and is FairTrade certified. Despite its majority male membership, at least half of the cooperative’s board consists of women, leading efforts in crop diversification such as figs, flowers, honey, and livestock. This structure positively impacts both coffee quality and the livelihoods of local communities.

A Vision for the Future

Vava’s passion extends beyond coffee export. Her commitment to youth empowerment led her to found initiatives like Gente Del Futuro, an educational programme equipping young people with the tools they need to thrive in the coffee industry. Additionally, projects such as La Dulce Toro, a coffee school in Lamu, not only educate local communities but also aim to transform how coffee professionals engage with producing countries.

This is the cold brew coffee recipe that we propose for you to make 600ml of cold brew. The ratio, in case you want to brew more or less than this quantity, is 1:15, 1gr of coffee for every 15gr/ml of water.

Recipe and equipment:

  • Coffee 40gr. (Use whichever coffee you prefer. We suggest coffees that you like in filter. The ones that are tagged with “Cold Brew” are our favourites).
  • Grind size: Comandante 16 clicks.
  • Water 600gr/ml at room temperature.
  • Water composition: 2 parts of Lanjarón for 1 part of Bezoya.
  • Mesh or silk.
  • Glass container (preferably with a lid).
  • Let it rest for 22 hours (in the fridge).

The way to make cold brew:

  • Grind the coffee with a medium grind. Comandante 16 clicks.
  • Pour the coffee directly into the mesh.
  • Introduce the mesh in the glass container.
  • Pour the water into the container through the mesh with the coffee.
  • Swirl to wet all the coffee.
  • Cover the container.
  • Let it rest for 22 hours in the fridge (beware of strong odors!).
  • When complete remove the mesh with the coffee and it will be ready.
  • Bonus: you can filter it again through a V60, Kalita or similar paper filter to obtain a clean and more crystalline result.
  • Keep it refrigerated.
  • This recipe is not to dilute. Not even with ice. If you add ice, the composition of the ice water will affect the taste of your drink. Better to make your own ice with the same composition of water proposed. If you use ice, you may want to lower the ratio (1:9 to 1:12).

This is the most current recipe available. It is important to note that this recipe serves as a reference and in fact there are a bunch of variables which influence the final espresso in your cup: from the state of your machine and grinder, the water that you use, the rest and conservation of your coffee beans, to the atmospheric temperature and pressure, etc, and therefore, you might have to tweak the recipe to be able to find a juicy and balanced espresso with your specific set up.
