El Palto Mujeres - Peru - Washed

El Diamante is a small coffee-growing region near the city of Jaén, where this washed lot comes from.

It is the result of the work of a few families who, together, sort and process their lots during the harvest season.

The region is rich in biodiversity and natural water sources. This regional lot consists of a selection of the best fruits from these small producers.

After floating and sorting the ripest fruits, the cherries are pulped, left to ferment for a few hours, and washed with water to remove any trace of mucilage. They are then spread out on raised beds, and the drying process is monitored, which usually takes several days until the desired moisture level in the beans is achieved.

El Diamante: A Treasure of Flavour and Tradition

Atop a small mountain, surrounded by the lush vegetation of the Jaén region in Peru, lies a hidden treasure: El Diamante, a magical corner where coffee comes to life.

Specialty coffee farm in Peru, El Diamante

In this fertile land, rich in biodiversity, a few families join in a collective effort to cultivate and process one of the world’s most cherished products: coffee.

The story of El Diamante is one of love for the land and dedication to specialty coffee. For generations, these families have worked the land with passion and care, treating each plant as if it were a member of the family.

It is this love for what they do that is reflected in every cup of coffee that comes from this region. The process begins in the fields, where coffee plants grow under the shade of century-old trees, in harmony with the nature that surrounds them.

Drying beds for specialty coffee from Peru

Here, farmers carefully select the best fruits, ensuring they harvest only those at the optimal point of ripeness. This attention to detail translates into the exceptional quality that distinguishes the coffee from these producers.

Once harvested, the coffee cherries are taken to the processing facilities, where a careful routine of sorting and preparation begins.

The cherries are depulped to reveal the precious beans inside, which are then subjected to a brief fermentation process to enhance their natural flavours. Then, the beans are meticulously washed with crystal-clear water from the region’s abundant natural springs, removing any trace of mucilage.

Drying of specialty coffee from Peru

Once clean, the beans are spread out on raised beds, where the drying process begins. Under the warm Jaén sun, the beans slowly dry, carefully monitored by the farmers to ensure they reach the perfect level of moisture.

This process can take several days, but for the residents of El Diamante, every moment dedicated to caring for their coffee is an investment in the quality and final flavour of the product.

The result of this hard work is an exceptional coffee, carrying with it the soul of the Jaén region and the heart of those who cultivate it.

This is the cold brew coffee recipe that we propose for you to make 600ml of cold brew. The ratio, in case you want to brew more or less than this quantity, is 1:15, 1gr of coffee for every 15gr/ml of water.

Recipe and equipment:

  • Coffee 40gr. (Use whichever coffee you prefer. We suggest coffees that you like in filter. The ones that are tagged with “Cold Brew” are our favourites).
  • Grind size: Comandante 16 clicks.
  • Water 600gr/ml at room temperature.
  • Water composition: 2 parts of Lanjarón for 1 part of Bezoya.
  • Mesh or silk.
  • Glass container (preferably with a lid).
  • Let it rest for 22 hours (in the fridge).

The way to make cold brew:

  • Grind the coffee with a medium grind. Comandante 16 clicks.
  • Pour the coffee directly into the mesh.
  • Introduce the mesh in the glass container.
  • Pour the water into the container through the mesh with the coffee.
  • Swirl to wet all the coffee.
  • Cover the container.
  • Let it rest for 22 hours in the fridge (beware of strong odors!).
  • When complete remove the mesh with the coffee and it will be ready.
  • Bonus: you can filter it again through a V60, Kalita or similar paper filter to obtain a clean and more crystalline result.
  • Keep it refrigerated.
  • This recipe is not to dilute. Not even with ice. If you add ice, the composition of the ice water will affect the taste of your drink. Better to make your own ice with the same composition of water proposed. If you use ice, you may want to lower the ratio (1:9 to 1:12).

This is the most current recipe available. It is important to note that this recipe serves as a reference and in fact there are a bunch of variables which influence the final espresso in your cup: from the state of your machine and grinder, the water that you use, the rest and conservation of your coffee beans, to the atmospheric temperature and pressure, etc, and therefore, you might have to tweak the recipe to be able to find a juicy and balanced espresso with your specific set up.

Recipe:

  • Ratio: 1:2.1
  • Weight: 18gr
  • Yield: 38gr
  • Time: 40-45s
  • Notas:

Variables:

  • Best resting time: over 2 weeks
