Marvin Carias is a first-generation producer.

In 1990, he purchased the first hectares of Las Brisas farm and over the years has reinvested profits and expanded his land to the 350 hectares that make up the farm today.

The biodiversity of the farm plays an essential role in the quality and continuity of its lots.

Marvin combines the planting of coffee trees with avocado, pine, and oak trees, among others, to maintain the microclimate and provide shade for the coffee plants.

This lot consists of the first selection of the best cherries once handpicked at their optimal point of maturity.

The cherries are depulped and undergo a classic washing process to separate all the mucilage from the bean.

They are then left to dry on raised beds.

Coffee Cultivation and Processing Process

At Las Brisas, a careful selection of cherries is made, handpicked only at their optimal point of maturity. The cherries not selected are destined for lower quality lots. The washed processing begins with immediate depulping and washing to remove the mucilage, stopping the natural fermentation and highlighting the intrinsic qualities of the grain.

Subsequently, the seeds are dried on raised beds for approximately two weeks, turning them regularly to ensure uniform drying.
