Edwin Noreña, a fourth-generation coffee producer from Quindío, is one of Colombia's most innovative coffee growers.

In addition to managing his own farm, he works as a processing consultant, coffee taster and Head Judge for the Colombia Cup of Excellence.

After more than a decade researching new fermentation techniques, he developed a co-fermentation method inspired by the production of craft beer.

For this Castillo variety lot, carefully selected cherries undergo a 72-hour carbonic maceration, during which natural ingredients such as hops and dried fruits are incorporated to enhance the coffee's aromatic complexity without masking its true character.

The coffee is then dried for 15 days on African raised beds before being carefully stabilised during its final resting period.

The result is a remarkable cup, intensely sweet and with a flavour profile as original as it is unmistakable.

Some coffees stand out because of their origin, others because of their variety, and some because of the way they are processed. But every now and then, a lot comes along that manages to combine all of these qualities. Edwin Noreña's Candy Crush belongs to that category: a coffee that does not seek to resemble any other, but instead demonstrates just how far specialty coffee can go when knowledge, creativity and respect for the raw material work together.

From the very first sip, it is clear that this is a different kind of experience. Freeze-dried strawberry appears with remarkable intensity, followed by delicate floral notes of lavender and a sweetness reminiscent of gummy candy. It is an unexpected profile, yet at the same time clean and beautifully defined, where every aroma finds its place without overshadowing the coffee itself.

Behind that cup lies years of research.

At Campo Hermoso, the family farm located in Circasia, in Colombia's Quindío department, Edwin Noreña has transformed coffee processing into a true laboratory of innovation. Surrounded by volcanic soils and a privileged microclimate, he works with some of Colombia's most exciting coffee varieties while developing new ways of understanding fermentation.

An agronomist, Q Grader and one of the most influential figures in Colombian specialty coffee, Edwin has spent years exploring how microbiology and biotechnology can expand coffee's sensory potential while preserving its identity. His work has made Campo Hermoso an international benchmark and a destination where producers and roasters from around the world look for insight into the future of coffee processing.

This lot perfectly reflects that philosophy.

The chosen variety is Castillo, probably the most widely cultivated coffee variety in Colombia. For many years it was regarded primarily as a productive and disease-resistant cultivar, but producers like Edwin have demonstrated that, when grown under the right conditions and processed with precision, it is capable of delivering exceptionally complex and expressive flavour profiles.

To achieve this, only perfectly ripe cherries are selected before undergoing an elaborate 72-hour honey co-fermentation process. More than a simple technique, it is a carefully designed approach intended to enhance the coffee's aromatic complexity by controlling the yeasts, sugars and fermentation environment. Every variable is adjusted with precision to create a specific sensory profile, always seeking a harmonious balance between fruit, sweetness, floral notes and the coffee's own character.

The result challenges many of the preconceptions associated with advanced fermentations. Rather than masking the origin, this coffee amplifies its potential, producing a vibrant, juicy and exceptionally sweet cup that remains remarkably clean and well defined.

Filter for Candy Crush

The following recipe is a guide for preparing coffee at home. Results may vary depending on your equipment, settings, and all the variables that influence extraction.

With each coffee we roast, our team performs tests until they find a recipe that highlights all the coffee's qualities. The one you'll see below includes all the necessary information to reproduce it. Even so, we always recommend trying and experimenting to discover what you like best: use it as a guide and adapt it to your liking.

Remember: it's the journey, not the destination, that matters.

To keep in mind: Water is the most important factor in achieving a great cup of coffee. Depending on where you live, its composition can vary drastically. Therefore, we recommend using at least filtered water; another option is a mixture of Bezoya and Lanjarón. When adjusting the recipe, change only one variable at a time to identify how it influences the flavor.

It's common to start by adjusting the coffee-to-water ratio. Once you get a cup with a pleasant intensity and mouthfeel, you can modify other aspects of the extraction.

Most pour-over coffee recipes use a ratio between 1:15 and 1:17, with a brew time of between 2:30 and 4:30 minutes.

Kalita / Origami / Orea

We have chosen this method to share our recipes because it is very versatile and easy to adapt to other pour-over systems. The flat bottom and wavy folds of Kalita filters create a wide surface that prevents significant flow blockages, caused by the migration of fine particles or clogging.

Kalita/Origami/Orea

Recipe:

  • Ratio: 1:16
  • Coffee: 20g
  • Water: 325g
  • Total time: 3.55min
  • Temperature: 94ºC
  • Grinder: 1Zpresso ZP6 5.2
  • TDS 1.35 % EY 20.87%

Variables:

  • Resting time: Minimum 7 days after roasting, but expresses best from 15-40 days.
  • Water: Bezoya
  • Filter: Sibarist Fast Flat

Equipment:

Orea, Sibarist B3 filter, Scale, stopwatch, grinder, cup/decanter, and gooseneck kettle.

Method:

  1. Place the Orea in a cup/decanter and insert the filter. Pour hot water to eliminate paper taste and preheat the equipment.
  2. Grind the coffee to the recommended level.
  3. Discard the water and place the Orea on the scale. Add the coffee, distributing it evenly. Tare the scale and start the timer.
  4. Pour 60g of water in circular motions and wait 30-40 seconds for the coffee to degas. If the coffee has been recently roasted, dedicate more time.
  5. Slowly pour up to approximately 200-250g of water and swirl the Orea once to level the coffee bed and ensure it is completely saturated with water. Never fill to the brim; leave at least a 2 cm gap from the top to limit water passage through the coffee bed, reducing extraction.
  6. Continue pouring water slowly as before until you have added the necessary amount of water.
  7. Swirl one last time and let the water drain.
  8. We are aiming for a total time according to the recipe. Adjust the grind size if necessary next time.

Espresso

Here's our most up-to-date recipe. It's important to remember that this recipe is a reference and that many variables will influence the final result of the espresso in your cup: from the condition of your machine and grinder, the water you use, the storage/steeping time of your coffee, to the temperature/atmospheric pressure, etc. Therefore, you may need to adjust some parameters to achieve a flavorful and balanced espresso based on your specific needs.

Recipe:

  • Ratio: 1:2.2
  • Dry: 18gr
  • In cup: 41gr
  • Time: 30-36s

Variables:

  • Resting time: minimum 2 weeks
  • Temperature: 94ºC
  • Pressure: 6 bars
  • Pre-infusion: No
  • GH 60 (ppm as CaCO3) KH 30 (ppm as CaCO3)

  • Mill: Mythos 1
  • Scoop: 22gr VST (without slot)
  • Extras: Barista Hustle WDT, Push Tamper (flat, 100% level)

Cold brew

When making Cold Brew, we typically make larger quantities than with other brewing methods. So, we're providing a recipe for one liter of Cold Brew. If you want to make more or less than this amount, the ratio is 1:14; 1g of coffee for every 14g/ml of water.

Recipe and equipment:

Preparation:

  • Grind the coffee to a medium/coarse grind
  • Place the coffee directly into the filter of the pitcher or bottle
  • Pour the pre-weighed water into the pitcher or bottle
  • Stir gently to saturate all the coffee
  • Cover the container
  • Let it steep for 16-24 hours in the refrigerator (be careful with strong odors!)
  • After this steeping time, remove the filter with the coffee, and it's ready.

BONUS:

Bonus 1:You can do an additional filtration with a V60 paper filter, Kalita, cheesecloth, or something similar to get a cleaner and clearer result.

Bonus 2:For the best flavor, consume as soon as it's ready, as it will oxidize over time.

Bonus 3:Do not shake or press the coffee to avoid extracting bitter flavors or sediment.

Bonus 4:You can freeze Cold Brew into ice cubes and use them to chill your Cold Brew or for making other drinks.

Bonus 5:Food safety: wash your hands and utensils properly. Keep for a maximum of 3 days in the refrigerator in a glass container, preferably closed and without additives (sugar, milk, etc.).
