How to prepare Chemex?

The Chemex coffee maker stands out at first glance for its iconic design. Created in 1941 by chemist Peter Schlumbohm, it features a thicker filter that controls extraction and highlights the coffee's clarity and nuances. The result is a clean yet full-bodied cup, ideal for those seeking precision and elegance in their preparation.

What do you need to prepare it correctly?
Equipment:

Chemex, Chemex filter, scale, timer, grinder, cup/decanter, and kettle.

Recipe:
Amount of coffee

22 grams (ratio 1:16.5)

Water

363 grams of water (50% Lanjarón and 50% Bezoya)

Temperature

96º

Grinding

21 clicks of Comandante (medium grind)

Time

3:30 minutes

Preparation:

  1. Fold the Chemex filter according to the box instructions and place it on top of the Chemex. Pour hot water over it to eliminate the papery taste and preheat the unit. Discard this water.
  2. Grind the coffee to a medium level (21 clicks of Comandante).
  3. Place the Chemex on the scale, add the coffee and distribute it evenly, tare the scale and start the timer.
  4. Pour 80g of water, using circular motions from the center outward, and make sure the coffee is completely moistened. Wait 35 seconds for the coffee to degas.
  5. At 12:30, slowly pour in up to 140g of water. Pour the water in circles from the center to the outside before returning to the center. Continue pouring water slowly in the center as close to the coffee as possible.
  6. Once the water has filtered through the coffee and there's little left to filter, pour it down to 363g of water in the same way as before.
  7. Let it filter until the coffee bed is free of puddles of water.
  8. Remove the filter with the coffee grounds and serve it in your favorite mug.
