How to prepare Italian Moka?

The Italian Moka pot, also known as a Moka pot or Italian coffee maker, was invented in 1933 by Alfonso Bialetti. This iconic brewing method uses steam pressure to force hot water through ground coffee, resulting in an intense and aromatic beverage that has been a symbol of coffee in Italian homes, and around the world, for decades.

Equipment:

Italian moka pot, grinder and your favorite mug.

Recipe:
Amount of coffee

Until the ladle is full

Water

Until reaching the tank valve (50% Lanjarón and 50% Bezoya)

95º

Grinding

15 clicks of Comandante (medium/fine grind)

Preparation:

  1. Pour water into the Italian kettle's reservoir until it reaches the level of the valve. This water can be added already hot, or you can heat it on the stove while you perform the rest of the steps.
  2. Grind the coffee to a medium-fine level (15 clicks of Comandante).
  3. Fill the Moka pot and distribute the coffee evenly, tapping gently to ensure it all settles. Then, level it off with a flat edge like the back of a knife to prevent any coffee from spilling out of the pot. It's important not to press or tamp the coffee.
  4. Next, place the coffee pot inside the tank with the hot water.
  5. Screw the top of the Italian coffee maker on using a slightly damp cloth, as the tank will be hot.
  6. Increase the heat on your heat source to approximately 60%. This means that if you have, for example, a standard ceramic stovetop with a heat setting of 1 to 10, you can set it to 6 or even 7
  7. Then lift the lid, and the coffee will slowly rise in a short time.
  8. We'll wait until the Italian coffee pot is a little more than half full and then remove it from the heat so the coffee can finish rising with the residual heat.
  9. Stir the coffee still in the Italian style and serve it in your favorite cup!
