The Clever coffee maker combines the best of immersion and filter coffee brewing methods. Its relatively new design incorporates a valve in the base that allows you to control the brewing time before releasing the filtered coffee, delivering a clean yet full-bodied cup. It's an ideal choice for those seeking versatility and precision in their preparation.

What do you need to prepare it correctly?

Equipment:

Clever, clever filter, scale, stopwatch, mill, cup/decanter and kettle.

Recipe:

Amount of coffee

16 grams (ratio 1:16.5)

Water

256 grams of water (50% Lanjarón and 50% Bezoya)

Temperature

97º

Grinding

26 clicks of Commander (medium/coarse grind)

Time

2 minutes

Preparation:

Place the dripper on a flat surface and insert the filter. Pour in hot water to eliminate the papery taste and preheat the unit. Discard this water.
Grind coffee to a medium/coarse setting (26 Commander clicks).
Place the dripper on the scale, add the coffee and distribute it evenly, tare the scale and start the timer.
Pour in the 256g of water using circular motions and stir gently so that all the coffee is in contact with the water.
Let it rest until the 3:15 minutes are up.
Place the Clever over a jug/cup and the coffee will begin to filter.
After 4:00 total minutes, remove the Clever and it's ready to drink.
