Filter Recipe for Efrén Echevarría

What do you need to prepare it correctly?

Equipment

Efrén Echevarría, Graycano, Graycano filter, scale, timer, grinder, cup/decanter, and kettle

Coffee quantity
20.6 grams (1:16.44 ratio)

Water
388.6 grams of water (Bezoya)

Preparation

  1. Place the dripper in a cup/decanter and insert the filter. Pour hot water to eliminate paper taste and preheat the equipment. Discard the water.
  2. Grind the coffee to a medium level, 9.5 on EK43.
  3. Place the dripper on the scale, add the coffee and distribute it evenly, tare the scale, and start the timer.
  4. Pour 80g of water with circular motions and wait 30 seconds for the coffee to degas.
  5. At 45 seconds, slowly pour water up to 200 grams. Pour the water in circles from the center outwards before returning to the center. Continue pouring water slowly into the center as close to the coffee as possible.
  6. At 1:30 min, pour the remaining water up to 388.6g.
  7. Wait until a total of 4:35 minutes has passed and remove the dripper. Serve in your favorite cup and it's ready to drink.
