Recipe for Filter for Nestor Lasso Sidra

What do you need to prepare it correctly?

Equipment

Nestor Lasso Sidra, Graycano, Graycano filter, scale, timer, grinder, cup/decanter, and kettle

Coffee quantity
20 grams (1:17 ratio)

Water
340 grams of water (Bezoya)

Temperature
95ºC

Grind
8.7 (EK43)

Time
3:45 minutes

Preparation

  1. Place the dripper on a cup/decanter and insert the filter. Pour hot water to remove any paper taste and preheat the equipment. Discard the water.
  2. Grind the coffee to a medium level, 9 on an EK43.
  3. Place the dripper on the scale, add the coffee and distribute it evenly. Tare the scale and start the timer.
  4. Pour 60g of water in circular motions and wait 30 seconds for the coffee to degas.
  5. At 30 seconds, slowly pour water up to 180 grams. Pour the water in circles from the center outwards before returning to the center. Continue pouring water slowly into the center as close to the coffee as possible.
  6. At 1:30 min, pour up to the final 340 grams of water.
  7. Wait until the total 3:45 minutes are complete and remove the dripper. Serve in your favorite cup and it's ready to drink.
