In the heart of the Huila Mountains, Colombia, a coffee grows that represents the dedication, effort, and legacy of a family committed to coffee farming for generations. This exotic variety, grown between 1,870 and 2,000 meters above sea level on the Los Nogales farm, embodies a history of perseverance and mastery.
The Los Nogales Estate and the Hernández Family Legacy
The Los Nogales farm is located in the district of Bruselas, in the El Diamante neighborhood. More than 80 years ago, Ricardo Hernández and Concepción Castillo found in these fertile lands the ideal place to plant a coffee tradition that continues to this day thanks to their grandson, Óscar Hernández. With an innovative approach and a vision for the future, the Hernández family has achieved international recognition, especially in 2005, when their coffee won an award at the prestigious Cup of Excellence competition.

After a career in the National Navy, he decided to take on the legacy of his father, Ricaurte Hernández, a visionary who revolutionized coffee production and marketing in the region, always seeking comprehensive development for the coffee-growing community. Óscar transformed the farm into a research and innovation center, where technology and biotechnology optimize every stage of coffee cultivation and processing.
A Painstaking Process for an Unforgettable Cup
This Wush Wush is the result of a meticulous process. It all begins with the manual selection of ripe berries, thorough cleaning, and sorting by density. The beans then undergo thermal shock: an innovative process that combines hot water at 80°C and rapid cooling, intensifying the flavors and adding complexity to the cup profile.
The coffee then undergoes a controlled fermentation for 120 hours, with the addition of preferments similar to those used in artisanal baking. This step gives it a distinctive character and balanced acidity. Finally, sun-drying for 15 days completes the process, stabilizing the beans and ensuring a unique sensorial experience.
